he rack oven series MC FORNI INDUSTRY is manufactured for small, medium and large bakery and confectionery workshops, functioning with GAS, OIL, ELECTRICITY or HYBRID.

The INDUSTRY series ovens are characterized by having the heat source within the baking chamber, allowing energy saving, a smaller footprint and improved baking performance.

MC FORNI ovens are made completely of stainless steel. Steam extraction hood with suction motor included and removable suction grille for easy cleanning the steam exhaust valve area.
The electric powered ovens require only one chimney for vapors (removable with a steam blast OPTIONAL). Internal illumination of the baking chamber (replaceable from the outside). Trolley included (without trays).
Gasket sealing of the door in siliconic rubber and steel to grant a hermetic seal of the door combined with the doublelocking to ensure a greater seal. Door with double glass and two door hinges designed to detach the door from the gasket without being damaged during the rotation.
Composed by a double layer of high density rock wool panels (100kg/m3) ensuring maximum thermal insulation and a long duration.

Built in refractory stainless steels, it enables over 90% efficiency, thus ensuring the consumption reduction.
The ovens of the INDUSTRY series are lifted from the ground in order to create an insulating air passage, which avoids the condensation below.
Constructed with stainless steel stacked drawers containing iron evaporator bars heated by the cooking air. These drawers can be easily removed for easy maintenance.

Programmable weekly self switch-on and automatic switch-off when not in use for a specified time. Manual mode is available or otherwise by creating storable programs with 3 cooking phases plus empty chamber preheating (99 programs memory). For every phase of a program the temperature, baking time and presence or extraction of the steam can be set. Automatic motorized steam exhaust valve. Self-diagnosis detecting eventual faults.
